Paleo Mint Chip Ice Cream




I just made kid approved spinach avocado "ice cream"  


Paleo Mint Chip Ice Cream 




Ingredients: 

  • 1 avocado 
  • 1 handful fresh spinach 
  • 1 can full fat coconut milk (I did not use the entire can you want to use as much as necessary to get the consistency necessary) 
  • Peppermint extract 
  • Enjoy life mini chips 
  • 2 frozen bananas (you will notice mine were frozen with the peel on! Do not do this. I did this because they were overly ripe and we were walking out the door for a three day weekend away from home and I didn't take the time to peel and bag them. I thought it wouldn't be that big of a deal. It really wasn't but its much harder to get a peel off when it's frozen.. duh) 


Blend frozen bananas with a little coconut milk 

This is just banana ice cream as is and it's great - but instead now add one avocado and puree 

In a separate container use an immersion blender and blend more coconut milk and the handful of spinach. Aside from the benefit of adding spinach to your ice cream its also going to add that bright green color without artificial coloring.




Pour the spinach coconut milk into the banana avocado puree and  a few drops of peppermint extract and pulse until combined.


Stir in some enjoy life chips and then pour the mixture into a tupperware and freeze again. Stir every hour for about 3 hours and then serve.
