Whole30 Jambalaya

Whole30 Compliant Jambalaya? SAY WHAT? 
This is pretty much the most amazing thing ever. A spicy tomato and veggie loaded sauce full of shrimp and sausage! 


1 Onion chopped 
2 Bell peppers chopped 
2 jalapeños chopped 
1 tbs minced garlic 
1 lb okra 
1 link of compliant sausage 
1 lb of shrimp 
crab meat (we had two crabs from a fishing trip) 
1 can crushed tomatoes 
1 can fire roasted diced tomatoes 
Slap ya mamma spice 
lousiana hot sauce 
olive oil 


Slice okra, toss in olive oil, and bake at 375 until slightly crisp 

Meanwhile sauté chopped onions, peppers, and garlic in olive oil until tender then add in sausage 

Stir in two cans of tomatoes, crab meat and compliant seasonings 

dump in roasted okra and simmer about 20 minutes 

stir in raw shrimp and simmer another 10 minutes or so until shrimp is just cooked. 

Serve in a bowl with Louisiana hot sauce! 

SERIOUSLY this stuff is good. You can serve it over cauliflower rice but it doesn't need it. You could try any combo of protein: chicken thighs, oysters, duck, etc.
