Round 2: 1st Five Days

DAY ONE: 

Breakfast was scrambled eggs with spinach and roasted sweet potatoes 

 

Lunch was a quick snack type meal because it got late. I had some dates and pecans. 





For dinner I made steak stir fry with frozen stir fry veggies, water chestnuts, bamboo shoots, and bean sprouts.

Sauteed the steak with onions, garlic, and coconut oil then added in all the veggies and seasoned. 



DAY TWO: 

I only had half a banana for breakfast this morning and some coffe! BORING

For lunch I had a roasted acorn squash filled with spinach and eggplant marinara 

For dinner I sauteed zucchini, made guacamole, and baked chicken with chipotle powder and salsa verde 


This salsa verde is whole30 approved! 

DAY THREE: 

Breakfast was SO good today. Steak with sweet potatoes, spinach, and a fried egg



For lunch I had leftovers from dinner the night before 


For dinner I made almond, coconut, curry powder crusted catfish with chili snap peas 





DAY FOUR: 

I only had coffee for breakfast today because I was getting ready for church and didn't make time to cook breakfast! 

For lunch I had sausage and roasted veggies 



For Dinner I had fig and balsamic pork with rosemary potatoes and roasted brussel sprouts 



I put a pork tenderloin in the crock pot with cut up fresh figs (plus a few dried ones I had) and about 1/4 cup of balsamic vinegar and set it on low. 

After about 6 hours I added in fresh rosemary for the last hour or so just to infuse a little flavor. 

Then I sliced it up 



And it was FAN-FREAKING-TASTIC 


DAY FIVE: 

For breakfast I had leftover roasted veggies and an aidelles chicken sausage 


For lunch we went to Brookshires Fresh in Longview and I got a delicious salad, some fruit, and a guava Kombucha but I didn't take a photo because my phone was in the car. 

While we were at Brookshires I picked up some more food, plus I got a shipment of mayo and ghee 













For dinner I made the applegate sausage with peppers and onions. 





I have also gone to the gym everyday and so far I have lost any weight I gained back from the cheat days! I love the way I am feeling and can't stress enough how Whole30 has changed my life! I feel better, I look better, and I am healthy!
