Fresh: My adventures in food and fitness shopping!


The first day Chris is off of shift is always a fun day in our house. We wake up and I make breakfast and we have a DVR marathon. This morning I made my favorite banana flax muffins. 









I decided to add blueberries this time and they were amazing. Here is the recipe just in case you're new to the blog. 

3/4 Cup whole wheat flour 
1/2 cup oats 
1/4 cup coconut sugar 
2 TBS ground flax 
1 tsp cinnamon 
1/2 tsp baking soda 
1 tsp baking powder 
1/4 tsp salt 
1 egg 
2 1/2 TBS coconut oil 
1/4 tsp vanilla 
1 mashed banana 
1/2 cup almond milk 
(optional mix ins: chopped pecans and blueberries) 


























I've been so inspired by the health and fitness posts on Instagram that after breakfast I decided I needed to take a trip to Tyler and hit up Brookshire's Fresh.


We decided to eat lunch there as well since just like whole foods they have a huge chef prepared section and salad bar area.





















It was so delicious! I could eat there everyday. Chris determined we had to move to Tyler and I agree!






When all of this produce is so gorgeous its hard not to crave fruit and veggies! I love this place. That meat that my husband is holding is Wagyu and... its was $280! Needless to say he admired it and then we walked away. Here is what I ended up taking home. 



After the grocery we headed to Academy and of course I was sucked in by the clothing and shoes. 
I have been drooling over these asics and decided I wanted them so bad I would use them as a motivational reward. 



CRAZY FREAKING CUTE 

So I will purchase these shoes when I lose 40 pounds! (all my pregnancy weight) 

I couldn't go home completely empty handed though. I did need some new socks and yoga pants and of course this hat and shirt. 






 When we finally got home I couldn't wait to try my Mate and Guajillo Chocolate.

Hashtag Inspired!

I have used Instagram for a while to post selfies and photos of my random daily life, but it wasn't until a few days ago that I discovered the ability to use Instagram as a motivational tool. It started with a simple hashtag click and suddenly I was aware of the tons of users who, like me, were working hard to eat healthy and get fit. I have started following several of my favorite users and I have already started a tiny following of my own. The blog is a great tool that I will continue to use, but for a quick share of my healthy breakfast when Emma is nursing Instagram is sure to keep me on track!

If you follow me on Instagram then you know I have been getting a lot of inspiration from a book I got last Christmas Hungry Girl To The Max The Ultimate Guilt-Free Cookbook which has tons of great ideas on ways to avoid eating too many calories while still getting full and feeling like you're treating yourself.


I love oatmeal and he recipe for a growing oat bowl is simple and amazing! 

1/2 Cup of oats 
1 cup of unsweetened almond milk 
1 cup of water 
pinch of salt 
cinnamon 
splenda 

Stir it up microwave in a TALL bowl for 6 minutes, stir and microwave another 6 minutes. 


 It makes a little 1/2 cup of oats turn into a giant filling bowl of oats! You can even make different creates by adding your own mix ins. I also made one with one mashed up banana mixed in before I microwaved it and when it was done I topped it with a few sliced almonds.


She also has single serving pancake recipes! I love chunky loaded pancakes and the carrot cake pancakes sounded so amazing. 


CARROT CAKE PANCAKES 

1/4 cup shredded carrot 
2 TBS canned pumpkin (I used apple butter because I didn't have canned pumpkin) 
2 TBS chopped or crushed pineapple 
2 TBS soy milk (I used almond) 
1/4 cup fat free egg sub.
1 TBS raisins (I used cranberries) 
1/2 tsp vanilla 
1 no-calorie sweetner packet (I used 1 tsp coconut sugar) 
1/3 cup Whole Wheat flour 
1 tsp cinnamon 
1/2 tsp punpkin pie spice 
1/4 tsp baking powder 
Dash salt 


This makes 2 amazing pancakes 


The batter is thick and chunky so you have to smoosh it out onto the pan. 
In her book she has a recipe for a powder sugar glaze to go on it, similar to an icing but I decided to just use 2 TBS sugar free syrup. 



My husband HATES zucchini and it is one of my favorite veggies. When he is at work I often cook it for myself for lunch. I cooked up zucchini, onion, carrots, and chicken with a little olive oil.


Eating it like this in a giant bowl would be great but I had leftover cooked whole wheat pasta from the night before so I mixed in marinara and ate it that way. 


I had one zucchini leftover and was in the mood for something sweet so I got inspired by a recipe I found online. It sounds crazy like I decided to throw everything I own into a batter and bake it, but it is seriously delicious and I highly recommend you make it NOW. 

Whole Wheat Zucchini Carrot Banana Blueberry Muffins 



1 1/2 cups whole wheat flour 
1 1/2 cups rolled oats 
1 1/2 tsp baking powder 
1/2 tsp baking soda 
1 tsp cinnamon 
1 tsp pumpkin pie spice 
1 tsp salt 
1/2 cup coconut sugar 
1/4 cup shredded unsweetened coconut 
1/4 cup chopped pecans 
2/3 cup FF egg sub 
1 tsp chia seed soaked in 1 TBS water 
2 mashed bananas 
4 TBS coconut oil 
1 tsp vanilla 
2 cups shredded zucchini and carrot (my ratio was probably 1 1/2 cups zucchini and 1/2 cup carrot) 
1/2 cup blueberries 

Mix all the dry ingredients in a large bowl 
Mix up the wet ingredients in a separate bowl 
Combine the two and fold in the blueberries 
Put in sprayed muffin tins at 350 for 20 minutes 
MAKES 24 









So amazing I am trying really hard not to eat them all. 
Even my zucchini hating husband gobbled it up.

Kale and Bananas

I love Kale! I don't know if it is because of the health fad with kale right now but I feel really good about myself when I eat it. I love it sauteed and mixed with rice and I love it cooked down in soups. 

Chicken Kale and White Bean Stew 


3 stalks of Kale chopped (rib removed)  
3 carrots chopped 
1 onion chopped 
2 cans of cannellini beans 
1 can of tomato sauce 
2 chicken breasts cut into bite size pieces 
1 carton of chicken broth 
Seasoning of choice 
DUMP ALL INGREDIENTS INTO A CROCK POT ON HIGH FOR 6-8 hours 






It was so good like this but I decided to switch up the leftover by adding curry paste and coconut milk plus a little ginger and lemongrass. 



If I am going to say I love kale I have to say I am madly and deeply in love with Chocolate. Can't live without it - it keeps my soul singing! I try to find ways to eat chocolate and still be healthy. 


Banana Oat Chocolate Chip Cookies 

2 Bananas mashed 
2/3 cup oats 
1/2 cup shredded coconut 
1/2 cup dark chocolate chips 
1/4 cup pecans 
1/4 cup flax meal  

Mix all the ingredients together and drop by the spoonful onto a greased cookie sheet. 
Makes 12 awesome healthy cookies 



I didn't think these would work with no eggs, butter, sugar, or flour but surprisingly they baked up like a regular cookie. They are so good its hard to only eat one or two so be careful. 



I have been really inspired the last few days to strive to make healthy choices about what I am eating and slowly its going to be a habit again. Its fun to challenge yourself to come up with really tasty food that you don't have to feel guilty about eating.

Broccoli Pesto Pasta and 150 calorie pint of Ice Cream!


Every time I cook Salmon for some reason I feel like I have to have broccoli too! 
I wanted to try something different than my usual roasted broccoli on the side so I made a broccoli pesto pasta. I boiled the broccoli and the whole wheat rotini together. I took out the broccoli when it was tender and put it in the food processor with olive oil, garlic, and a few pecans. I seasoned it with salt, pepper, and red pepper flake. 
After the pasta was cooked I drained it and tossed it with the broccoli pesto. 

It was so good that I saved a little to eat cold like pasta salad for lunch today! 


I made a chicken wrap from heaven to go with it. I cooked chicken in a skillet with honey and balsamic reduction. 





I seasoned it liberally with black pepper and put it on a whole wheat tortilla with goat cheese and fresh strawberries. 



I think next time I will add spinach leaves but today I didn't have any. 
This would also be great over spinach as a salad instead of a wrap. 
SO AMAZING! Try it for real!


Last night (aka 3am nursing session) I was looking through old blog posts for some inspiring healthy breakfast ideas. 
I came across my post about banana flax muffins and knew I had to have them this morning for breakfast. 


Banana, Oat, Flax Muffins 

3/4 cup whole wheat flour 
1/2 cup oats 
1/4 cup brown sugar 
2 tbs. ground flax seed 
1 tsp. cinnamon 
1/2 tsp baking soda 
1 tsp. baking powder 
1/4 tsp salt 
1 egg 
2 1/2 tbs coconut oil 
1/4 tsp vanilla 
1 mashed banana 
1/2 cup almond milk 
1/4 cup chopped pecans 



Bake at 350 for 20-25 minutes 


These are so dang good! You really have to try them.

Yes thats a pint of Ice Cream for 150 calories. 



They have several flavors and I wasn't dissapointed. On the container it says to let it thaw for about 5-10 minutes because when its fresh from the freezer its not super creamy since there is not fat. 
It does become delicious after a few minutes at room temp and it is seriously a great dessert option if you are watching your calorie and sugar consumption.
