Last night I had that GURG back to work feeling. I really don't hate my job I promise but everyone loves a day to sleep late and not have to worry about dealing with people. I love my "me time"!
It gave me a ton of time to look at recipes and get inspired. Last night I made artichoke and olive quinoa with roasted onion chicken.
This is seriously the best quinoa I have ever made. It got real creamy almost like a risotto for some reason. I put olive oil, 1/4 cup of olives, and one can of artichokes in a pot and cooked it for just a little bit. Then I added 2/3 cup quinoa and stirred that around and cooked it for literally like one minute before adding in 1 1/3 cup of water and brought it to a boil. Then simmer with a lid. It was SO good with the brine of the olives and the heavenly wonderful artichokes. It was a "I can eat this everyday" kind of meal. The chicken I cooked in a dutch oven after coating it with a packet of lipton onion soup mix and put a little water just to cover the bottom of the pot. I covered and cooked it about 30-40 minutes.
After dinner this adorable dog and my husband cuddled and watched football together. If you don't own a dog you are seriously missing out on life!!! :)
OK today I wore my next Gwynnie Bee outfit!
I got a ton of compliments on it. I am almost tempted to wear it more than once before I return it ... but I have so many clothes in my GB closet awaiting my returns that I want to get it back to them ASAP so I can get my new clothes several of which are very MEXICO trip. (I am going to Mexico Oct. 4th-7th)
The belt that came with it was a little thin brown leather tie and I didn't think it worked well - the dress is white with black polka dots... a brown belt???? WEIRD So I added my big black belt.
I love my profile so much better! I actually don't come across as a pregnant woman.
The zipper down the back is super cute.
All my students LOVED my hair today. I guess I should actually try to look cute more often haha.
Today after work I headed to the gym and got my workout on. I could have pushed harder but my knee was bothering me. I felt like I should have given more but I was exhausted and slightly injured and opted to leave after only 30 minutes. 15 minutes of my cardio walk/jog circuit and 15 minutes of weights. DONE
Tomorrow I will push harder.

Yesterday I went to wal-mart for some supplies for a bachelorette party I am making some stuff for and while there I saw this
PUMPKIN SPICE MARSHMALLOWS
I knew these would be perfect for my low calorie sweet go to - smores rice cake.
AND ONCE AGAIN I WAS RIGHT
Top rice cake with 3-4 marshmallows (they are small) and 6 dark chocolate chips. Microwave about 20 seconds and then smooth the fluff and chocolate around the rice cake and ENJOY!
